Domaine de l’Aigle Chardonnay 2018

This lively Chardonnay dances lightly from crisp notes of Bosc pear to a rich almond finish. Part of the Gerard Bertrand group of wine projects, Domaine de l’Aigle features a cool high-altitude microclimate perched under cliffs where eagles nest near Limoux—famous for its sparkling blanquette—and just northwest of the much hotter Cotes du Roussillon. Serve moderately chilled with seafood, a soft Morbier cheese, or a salad of toasted walnuts, endives and bleu de causse. About $35/bottle. (Harry Vandervlist)
