Today, Fairmont Chateau Lake Louise announced the release of a new signature whisky made exclusively for the resort — and for sale only at the resort, just in time for the holiday season and ski season.
A partnership with Park Distillery in Banff and Nils Schabert, regional manager of mixology for Fairmont Hotels & Resorts in Canada’s Western Mountain Region, Untamed whisky is made from 100 per cent rye and is the only whisky aged in Banff National Park.

To make the spirit, Schabert tasted all eight barrels of raw 75 per cent proof whisky already being aged at the distillery. Then, after selecting his favourite, he and the team carefully diluted it with pure glacier water to bring the final product to a 45 per cent proof. The water is sourced from six glaciers in the Rocky Mountains, Schabert notes. “It gains minerality as it travels down the Bow River, past us here at Fairmont Chateau Lake Louise, down to Park Distillery in Banff.”
What to expect? Well, we at Drink with Me haven’t tried it yet, but according to the supplied tasting notes, “Untamed signature whisky smells of candied orange rind with subtle notes of dark chocolate, black pepper and overripe plum on the nose while bringing a flavour of cinnamon spice and wildflower honey with green fennel and crabapple to the palate. Schabert describes the finish as leather and tobacco leaf with a strong lasting choke cherry mulled wine.”
